The problem is that whatever cooled down the roof of your mouth, usually it cooled down your tongue as well.

Here's an article from science daily on it, but it doesn't mention people being more susceptible. Your tongue, I think, has a lot more blood vessels in it (strongest muscle in your body I've heard, and I expect that requires a good blood supply).
