I've been on a bit of a Star Trek kick again lately. Mostly old real Trek. The only new thing I've sat through is when my son made me sit down with him and watch Star Trek: Prodigy season 1. I have to say, for what it was it was executed very well. A show kids and parents can watch together. It gets away from the grind of Starfleet in a clever way by having the typical ragtag group of youths steal a starship to justify why this cast is actually on the ship. It worked very well and we plan on watching the next season when it drops.
For old stuff I've been watching the kirk era movies again. I've been rediscovering love for the 1979 TMP film with the new cleaned up re edited version Paramount released to streaming. Maybe it's because I'm older but that movie has aged better and better as time goes on.
For toys I picked up the mego 12" 1979 TMP figures of Spock and Kirk complete in their boxes. And I've been working on getting all 4 of the 1984 Ertl figures for the Search For Spock. I just need Kirk now to complete those and they display great with my 3 3/4" TMP mego figures. And lastly I picked up a 1995 Playmates Enterprise from TOS era. I got it for 50 bucks loose with the stand and after removing and fixing the decals it makes a really nice display piece for a toy. Not as nice as a high end model but for the price it's still pretty accurate and looks good.

^I feel like fans in general have re-evaluated TMP and rank it higher. I enjoy it. I joke with my mother because she says the scene where Scotty takes Kirk to dock with the retrofit Enterprise is way too long and I keep telling her I could look at the model at least twice as long.
I have the Knickerbock Kirk. They only made one other (Spock) and neither is super rare. They're soft-body with hollow, dolllike heads.

Are those the plush like figures? I think I know the ones you are talking about. Pretty cool. And yea I agree about the spacedock scene. I'm a sucker for those scenes where we get those Enterprise money shots as the crew sees the ship again along with the audience. Never too long.

I've watched all the shows from TOS through ENT at least twice (many much more) and like them all.

Here's the other two photos that cover my Star Trek displayed collection. I don't display everything (like my Playmates TNG figs) and I got the 12" Mirror Universe Marlena while in Chicago. Also, my many Trek books are on a separate shelf because it just doesn't really work layoutwise particularly because of the Enterprise phone that is my working den phone):
