Well, we did see the Wookie home world in Revenge of the Sith, so I don't think the audience will be totally clueless about other wookies existing in Star Wars.

It isn't that they would be clueless about other Wookiees, it is that they would see no reason to replace Chewbacca, the Wookiee they already know and like from previous movies, given that all the other original characters seem to be around, and it has already been established in the movies that Wookiees live longer than humans. I'm kind of doubting that the filmmakers see Chewbacca having been killed in an EU novel as sufficient reason to eliminate a character that most fans will be expecting to see, if the new movies have the old characters in them (which they apparently do). I could be wrong, though. It isn't really like Chewie has ever done that much, but I think people will wonder if he's not there and Han is.

My thoughts are, yes, the original cast members will be there including Chewbacca. Since the original cast would be there, I hate to think that Peter Mayhew wouldn't be included, even if they have to prop him up some how. However, I think they hand the franchise over to a new generation, meaning a new wookie like Lowbacca. Oh, sure. I don't see any problem with that idea, just saying that as far as the EU is concerned, I doubt that Chewie's death will be acknowledged in the new films. Though who knows if they will replace Mayhew. 'Star Wars VII': Daniel Day-Lewis rumors swirl
The Hollywood trade press is abuzz with speculation about the Oscar-winning actor's possibly being approached to star in the seventh installment of the sci-fi saga.
According to Latino-review.com, Daniel Day-Lewis was seen having lunch with George Lucas and with Kathleen Kennedy, the producer of the forthcoming film. Other than the identity of its participants, there is no indication that the meeting was a discussion of "Star Wars VII."
The actor who brought Lincoln to the screen in Steven Spielberg's biopic is the latest in a long list of celebrities who have supposedly been approached to join "Star Wars VII." The Hollywood trade press has also cited Ryan Gosling, Zac Efron, Jonathan Rhys-Meyers, Benedict Cumberbatch, Alex Pettyfer, Michael B. Jordan, Liam McIntyre and David Oyelowo as possible participants in the film, although none of the rumors have been confirmed. The 19-year-old actress Saoirse Ronan, however, did reveal that she had auditioned.
Few details have been revealed regarding the plot of "Star Wars: Episode VII." The film will be set 30 years after "The Return of the Jedi" (1983) and will focus on the destinies of Luke and Leia Skywalker's descendants. Director J.J. Abrams will begin shooting the film, the first in a new trilogy, at the end of this year. The film is slated for release in December 2015.

Couldn't the same have been said for Alec Guiness? You've got me there, as I haven't seen any Alec Guinness movies. Except Bridge on the River Kwai and it's been years since I've seen it, don't even remember him in it. I was extremely young when I saw it. Like 7-8 years old.

I would think so. I mean he won Best Actor for Bridge on the River Kwai. He was also in Doctor Zhivago, and Lawrence of Arabia. He was an acclaimed Shakespearean actor prior to going into movies.
